Pour Over

* Stagg X/ flat bottom drippers 

Ingredients:

  • Coffee: 15 g

  • Water: 250  g at 210 °F

Grind Settings:

  • Ode + SSP Burrs: 5 - 6

  • Ode Gen 2 Burrs: 4 - 5

  • Ode Gen 1 Burrs: 3 - 4

  • Opus: 5 - 6 (inner ring at 0)

Steps:

  1. Grind coffee at medium setting

  2. Rinse filter with 210°F water

  3. Bloom: Pour to 50 g water, wait 30 seconds

  4. Continuous pour stages:

    • Pour to 100g,

    • Pour to 150g

    • Pour to 200g

    • Final pour to 250g, NO swirl

  5. Target brew time: 3:00 - 3:30 minutes


Espresso

Recipe:

  • Coffee: 19g

  • Yield: 48g

  • Temperature: 208°F

  • Ratio: 1:2

  • Pressure: 9 bars

  • Pull time: 25 - 28 seconds

Note: Sylvia’s coffee is quite malleable - tighter ratios show brightness and calamity, while this 1:2 shows more balance and fall vibes.

Grind Settings:

  • Ode + SSP: 7.1 - 10

  • Ode Gen 2: 6.1 - 9

  • Opus: 7 - 10 (Use finer settings for 450-750ml, coarser for larger volumes)
