Fellow's Take on Ratnagiri Scoby Jasmine by Driftaway | Brew Guide

By Hailie Stevens

A triple threat of a coffee, bringing together Driftaway, the 2026 Roaster of the Year; one of India’s most innovative coffee producers; and an experimental fermentation process for a cup unlike almost anything we’ve tasted.

Ratnagiri Scoby Jasmine comes from Ratnagiri Estate in southern India, where third-generation producers Ashok and Divya Patre are helping push Indian specialty coffee in a new direction through thoughtful, experimental processing.

This Catuai undergoes a 72-hour fermentation with a specific yeast strain and lactic acid bacteria similar to a kombucha-style scoby, followed by an exceptionally slow 29-day dry.

The extended process creates an intensely floral, almost perfumed cup with bright acidity, layered sweetness, and lingering florals. Expect notes of jasmine oil, coconut, and lavender, with toffee and wildflower honey emerging as the coffee cools.
