Fellow's Take on Ethiopia Reko by Ruby | Brew Recipe

By

A shining example of Yirgacheffe’s terroir from Ruby Coffee Roasters, with bright citrus, delicate florals, and rounded honey sweetness. Ruby has sourced coffee from the Reko community in Kochere, Ethiopia, for 11 years.

Reko is exemplary of Yirgacheffe’s terroir – floral, soft, sweet, and fruit-forward, with bright citrus notes. Local heirloom landraces, including Kurume, contribute intense aromatics, while the region’s unique microclimate and iron-rich soils shape its distinctive character. Ruby carefully roasts this coffee to bring these qualities forward while preserving the honey sweetness and rounded body that we love. Lemon meringue, lavender, apricot, and honey.

🌎 Origin: Kochere, Yirgacheffe, Ethiopia
⚗️ Process: Washed
🔬 Variety: Heirloom landraces, including Kurume
🔥 Roast: Light

Note: Ruby recommends resting this coffee for 10–14 days following roast for optimal brewing.
