Together with their mother, Martha Montenegro, brothers Elias and Shady Bayter have taken the fruit-forward profile of coffees from their region to a new level. Honey processed, Swiss Water decaffeinated, expertly roasted by Equator Coffees, it all adds up to one of the best decafs we've ever had.

Espresso - Series 1 Settings

Series 1 Profile Parameters:

  • Dose: 18g

  • Ratio: 1:2.5

  • Temp: 200°F

  • Declining Temp: Off

  • Transition: Smooth

Preinfusion:

  • On/Off: On

  • Duration: 14 seconds

  • Pressure: 3 bars

  • Fill Flow Rate: 4.5 ml/s

Infusion 1:

  • Duration: 10 seconds

  • Pressure: 7 bars

Infusion 2:

  • Duration: 10 seconds

  • Pressure: 9 bars

Ramp Down:

  • On/Off: On

  • Duration: 10 seconds

  • End Pressure: 6 bars

Grind Guidance

Start in the middle of your espresso range and Series 1 will guide you finer or coarser after your shot pulls. Expect to dial in based on your specific variables (location, climate, water mineral content, etc.). Small adjustments go a long way with this delicate Pink Bourbon!

Espresso Recipe:

  • Dose: 18g

  • Yield: 45g

  • Ratio: 1:2.5

  • Temperature: 200°F

  • Pressure: 8 bars

  • Pull Time: 40 seconds

Tips:

  • Grind finer if your shot pulls too fast; grind coarser if it pulls too slow

  • This is a washed-process decaf - expect a clean, bright cup with stone fruit and floral notes

  • Clean your Series 1 regularly for optimal performance

Pour Over - Stagg X / Flat Bottom Drippers

Ingredients:

  • Coffee: 19.3g

  • Water: 300g at 208°F

Grind Settings:

  • Ode + SSP: 4.1-5

  • Ode Gen 2: 3.2-4.2

  • Opus: 4.2-5 (inner ring at 0)

Steps:

  1. Grind coffee at medium setting

  2. Rinse filter with 208°F water

  3. Bloom: pour to 50g, stir, wait 40 seconds

  4. Continuous pour stages:

    • Pour to 100g, swirl

    • Pour to 200g

    • Pour to 300g, stir

  5. Target brew time: 2:30-3:30 minutes
